Carpaccio di San Valentino

Ingredienti:

100g carne bovina per carpaccio
30g Parmigiano reggiano 36 mesi
2 cucchiaini di marmellata di arance
noci q.b.
erba cipollina q.b.
maggiorana q.b.
pepe nero
sale
olio EVO

Per prima cosa, preparate i cuoricini di cialde di parmigiano reggiano 36 mesi, per i quali vi occorre uno stampo a cuore per biscotti.
Grattugiate finemente il parmigiano. Rivestite una teglia con carta forno poi, utilizzando lo stampino, create tanti cuoricini di parmigiano (ne vengono circa 8).
Fate cuocere in forno preriscaldato in modalità ventilata a 200° per 4 minuti, poi estraete i cuoricini dal forno e lasciate raffreddare.
Condite le fettine di carpaccio con l’erba cipollina tritata, sale, pepe e olio e lasciatele marinare per almeno mezzora.
Sgusciate le noci e rompetele grossolanamente.
Sistemate 3-4 fettine di carpaccio in ogni piatto arricciandole un po’, poi mettete i cuoricini di formaggio qua e là sul piatto, magari lasciandone uno dritto.
Utilizzando due cucchiaini, create delle quenelle di marmellata d’arance e sistematele sulla vostra portata.
Guarnite coi gherigli di noce e qualche fogliolina di maggiorana.
Completate con un filo d’olio a crudo e un pizzico di pepe nero e servite.
La vostra insalatina di carpaccio è pronta, buon San Valentino!
